Service Source Sous Chef in Quantico, Virginia

Job Summary Assist the daily operations of the kitchen, including menu development, inventory and purchasing of supplies, and cost control. Oversee the activities of the kitchen staff and monitors food production and presentation.

Primary Duties Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions. These duties and responsibilities will be rated on the Annual Performance Review.

  • Ensure that all stations remain stocked before and during the meal period.

  • Verify that kitchen staff follow all recipes and portions servings correctly.

  • Keep kitchen, dish, and storage areas clean and organized.

  • Place food and supply orders as directed.

Additional Responsibilities

  • Assist in hiring and training employees according to company standards.

  • Set excellent customer service and work examples.

  • Manage staffing levels throughout shift.

  • Oversee kitchen labor and food cost to budgetary requirements.

  • Perform other responsibilities as assigned.

Qualifications: Education, Experience, and Certification(s)

  • Associate degree or 3-5 years progressive professional cooking experience required.

  • 2 years of management or supervisory experience required.

  • Culinary experience in a hotel or banquet hall preferred.

  • Posses SERV Safe certification or ability to obtain it within 90 days required.

Knowledge, Skills, and Abilities

  • Strong interest in training and coaching.

  • Ability to fill-in for any kitchen position.

  • Proficient in MS Word and Excel.

  • Ability to work in a high-energy and demanding environment and works well under pressure.

  • Commitment to quality service, and food and beverage knowledge.

  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

  • Basic understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.

  • Ability to effectively communicate orally and written.

  • Strong leadership and organizational skills and is a team player.

  • Can effectively solve problems.

While performing the duties of this job, the employee is regularly required to stand; reach with hands and arms; and talk or hear. The employee Is occasionally required to walk and sit. The employee may occasionally lift or move products and supplies, up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, depth perception, and ability to adjust focus.

Work EnvironmentWhile performing the duties of this job, the employee is occasionally exposed to outside weather conditions. The noise level in the work environment is usually moderate to loud.
