Bear Mountain Health Care Cook PM shift in East Longmeadow, Massachusetts

Full time Night Cook: 11am-7pm, Every other weekend

Essential Functions:

· Preparation of meals according to menu plan, and in compliance with regulatory requirements.

· Ability to manage portion control, ensuring proper preparation of select foods to meet individual need.

· Demonstrates close attention to detail

· Demonstrates organizational skills

· Demonstrates a working knowledge of regulatory requirements as related to food preparation, serving, delivery and storage.

· Demonstrates competency with maintaining kitchen safety and infection control principles.

· Able to communicate effectively with a diverse group of individuals, including residents, families, staff and persons from outside the organization

Typical Work:

· Prepares meals, nourishments and special dietary requests according to the established menu plan.

· Able to read, prepare recipes and maintain portion control.

· Able to read/follow production sheets, including pull and prep lists.

· Serves food according to established facility guidelines, and checks trays for accuracy and completeness.

· Reads and follows work schedules and job tasks lists.

· Participates in the cleaning of the kitchen area and equipment.

· Assures that food and supplies are stored according to regulatory guidelines, and infection control requirements e.g. properly reads and documents refrigerator/freezer temperatures, properly reads and documents dish-machine temperatures (Wash and Rinse).

· Assures nourishment, open food containers and leftover food products are properly labeled and dated

· Follows food storage system – First IN First OUT (FIFO)

· Responds to nursing requests for resident nourishments and substitutions as necessary

· Routinely tastes and monitors food flavor, texture, color and temperature.

· Assists in the delivery of food to residents as needed or assigned.

· Knows where MSDS (Material Safety Data Sheet) can be located, able to read and interpret information.

· Maintains a work area that is cleaned/sanitized prior to work in assigned area.

· Ensures sanitizing bucket/spray bottles are properly filled at the start of each shift as well as refilled and clean cloths available through out shift.

· Ensures that pots and pan sink is filled per protocol and tested with test strips at each filling of the third tank to ensure sanitation.

· Ensures that all cleaning tasks are completed as scheduled or sooner as needed. i.e. all spills are wiped or mopped immediately; tray and transport carts are cleaned and sanitized inside and out. Dishes, utensils, glasses etc. are cleaned and stored properly.

· Ensures that trash is taken out every shift and as needed in the appropriate manner, that garbage cans and lids are clean.

· Floors to be swept and mopped using clean mop head, water and appropriate chemical usage. Proper rinsing per chemical used.

· Safety is monitored at all times for spills or mopping. Ensure wet floor signs are used.

· Ensure proper storage of mop heads and brooms

· Follows facility dress code / hygiene policy

· Demonstrates flexibility, cooperativeness, courtesy and teamwork.

· Role models good work habits, punctuality, attendance, appearance, conduct.

· Observes and follows facility protocols with respect to resident dignity, privacy and confidentiality.

· Maintain a professional and positive demeanor

· Must meet all local health regulations, including criminal background investigation and reference inquiry.

· Must have a valid Food Handler’s Card, ServSafe Manager's course

Must be able to perform the essential job functions of the job, with or without reasonable accommodations.
